For instance, coconut oil is full of medium chain triglycerides (MCTs), which are healthy fats that are easily digested, absorbed, and put to use nourishing the body. Coconut oil has also been shown to boost immune function and help control blood sugar. It acts as an antibacterial, anti-fungal and anti-inflammatory agent.
Another benefit of cooking with coconut oil is that you can cook it to a very high temperature without it becoming rancid, unlike many other oils.
And, even if you don't like the taste of coconut, you can utilize the oil as the taste is not strong.
