Steven-MasleySteven Masley, MD, is a physician, nutritionist, author, speaker, and award-winning patient educator. He has devoted his medical career to the study of heart disease and aging, and has published significant research on these subjects in leading medical journals. Oils and saturated fats have gotten the blame for cardiovascular disease for years.

The truth is, the number-one cause for heart disease (and memory loss) is consumption of sugar and refined carbs, such as flour, white rice, and white potatoes. 

Fats have been proven to be beneficial in many areas of health, including lowered blood sugar levels and reduced inflammation.

The trick is to consume oils in an appropriate manner.

Avocado oil is great for cooking. Not only does it have a high smoke point (520 degrees Fahrenheit), but it's known for improving many aspects of your health.

Other oil options that can withstand a high smoke point include nut oils and ghee (clarified butter). 

If you're using sesame oil, coconut oil, or extra virgin olive oil (EVOO), keep them at low to medium heat.
