The mainstream medicine view of gluten sensitivity was one of "you have it or you don't."

However, recent studies have shown that there is a spectrum of gluten sensitivity. You can be sensitive without having celiac disease.

An allergy prompts an immediate anaphylactic reaction, like swelling, itching or difficulty breathing. The histamines in the body cause this reaction.

Those with celiac suffer an inflammatory condition of the gut when gluten crosses the gut barrier. Digestive issues follow.
